Here I will show you step by step how to make a pie crust.  The following recipe makes two 9 in. pie crusts.  Above are the basic ingredients:

4 cups flour

2 tsp salt

3/4 to 1 cup cold water

2 cups butter, cold and cubed

Directions:

1. Combine flour and salt in a large bowl.

2.  Placed cubed butter in the freezer for about 15 min before using. You don’t have to do this but it helps get maximum flakiness.  Pour butter into flour mixture.

3.  Using a fork, cut the butter into the flour mixture.

4.  The goal is to get ‘pea’ sized pieces of butter.

5.  Continue cutting the butter into the flour mixture. The mixture should feel like wet sand.

Above is a close up of what ‘pea’ size or the wet sand texture looks like. You still want small pieces of butter in the dough to create flakiness.

6.  Add 1/2 cup of cold water to mixture. I add ice cubes to my water to make sure the water is very cold just don’t mix the ice cubes into the dough.

7.  Use fork to mix water into the butter and flour mixture. It should start to clump to together and form a dough

8.  Continue to add 1/4 cup of water at time and mix with fork.  Notice the clumps get larger.  This dough texture is also described as ‘shaggy.’  You know it is ready to form into a dough when you take a handful of the clumps, press them together and it holds its shape.  Please note that the recipes calls for 3/4 to 1 cup water.  You may not need all of it.  You only need to use as much water needed to incorporate all of the flour  into the dough.  There should not be loose flour in the mixture.  If there is continue to add water and combine until all flour is incorporated.  You want to work quickly and not over mix the dough.

9.  Press the dough into the bowl.  If it holds its shape, it’s ready to pour out and shape into discs.

10.  On a clean work surface, dust with flour.

11.  Pour out dough onto clean floured surface.  Shape the dough into one large disc.  Notice the bowl that contained the dough does not have any extra flour at the bottom of it.  This mean all flour was incorporated well.

12.  Since this is a two pie crust recipe, cut the pie into two equal pieces.

13.  Take each piece and form into smaller discs.

14.  Wrap each disc in plastic wrap.  Refrigerate over night or at least one hour before use. (there is no photo)
